New Recipes...
We've been testing out some new fun recipes this week. Every once in a while I like to hop on Pinterest to check something that I've pinned and try it, that way we don't get stuck in a rut. All three of these recipes we loved. Including the kids so that's saying something!

I followed the recipe (linked above) exactly minus the green onions and cilantro on top. I subbed fat free feta cheese for the cojita cheese simply because I had some on hand, and you don't need much. We also topped with a little salsa too. And the filling was yummy the next day with an egg!
Serving size for filling is 1/2 cup - 201 calories (you can steal this from my fitness pal account we ate it on May 30th for dinner and May 31st for lunch)
I love these tacos and they were super easy to make. You'll need...
1 pound raw shrimp peeled and deveined
1/2 cup sweetened coconut flakes
1 egg white
1/4 head of cabbage
1 avocado
tortillas
3 tbsp. orange marmalade
1/2 tbsp. Chili Garlic Sauce
Preheat oven to 375. Put coconut in blender or food processor until it resembles a course flour. Whisk egg white until frothy. Take shrimp and dip in egg white, then into coconut flour until covered. Place on a greased cookie sheet. I like to spray my shrimp with cooking spray to help them brown. Bake for 10 minutes. While the shrimp cook cut cabbage, avocado and heat tortillas. To make the sweet spicy sauce mix marmalade and chili sauce together. Enjoy.
Serving size for shrimp is 1 shrimp = 34 calories, we had 4 per taco (can also steal from my fitness pal at on May 30th)
I think we might have a problem, we love franks buffalo wing sauce. It's soooo good on everything I swear and this was not any different. You'll need...
Chicken breasts halved
sandwich slims
lettuce
tomato
buffalo wing sauce
ranch (I used homemade greek yogurt ranch- half a ranch packet, 1/2 C. fat free greek yogurt, 1/2 cup milk, 1 tbsp mayo)
Season chicken lightly with salt and pepper and garlic powder. Grill chicken and baste with franks sauce after the first turn. Once done build sandwich. 1 tsp. yogurt ranch on both sides of sandwich slim, chicken breast, tomatoes and lettuce. Its so easy!
Serving size, 1 chicken breast half (3.5 oz) - 110 Calories
Yogurt Ranch serving size is 1 tbsp. - 37 calories
all together - 267 calories
